Last week’s menu was a hit!  The turkey breast turned out great and gave me enough for a turkey pot pie and turkey salad sandwiches over the next couple days.  My new recipe for the week was Rotini Alfredo from goodLife {eats}.  I think I added the rotini part since that is our noodle of choice!  It was super easy and my family loved it!  My daughter’s favorite is alfredo sauce.  I’ll be adding this one to my recipe list.  The tortilla casserole is a family favorite that I have modified over the years.  One of these days, I’ll post the recipe.  I, also, tried my hand at making bread.  My mom gave me her old bread maker and I made a couple loaves of wheat bread.  They turned out ok, but not what I was looking for.  My goal is to find an everyday bread that we can eat with sandwiches and toast.  Anyone have a recipe?  Bread machine or traditional, don’t care, please share!

This week, I have just one new recipe to try – Empanadas.  I wanted to try the fajitas goodLife {eats} shared last week, but I couldn’t find red and yellow peppers I wouldn’t have to mortgage the house for, so I replaced it with a grilled flat iron steak.  The weather is supposed to finally get nice here about mid-week.  Hopefully, we can start grilling again.

Here is my menu plan for this week.

  • Empanadas, corn, chips and salsa
  • Asparagus quiche, ambrosia salad
  • Grilled flat iron steak, potatoes, broccoli/cauliflower salad
  • Chicken and noodles
  • Spaghetti and meatballs (homemade sauce and meatballs from the freezer)
  • Somewhere in there I’m also making cherry cheesecake!!!!!

    Let me know how the empanadas turn out; I would like the recipe to your tortilla casserole!

      The Empanadas were so easy. Its one of those recipes that I want to make again, but next time I want to try and tweak it a little. They were good, but I want to add a little more zip to them. The kids loved the filling, but Tom and I wanted more spice. Next time…

    I’m new to MPM today… do you go in order of what you have listed? (I see you didn’t include the days beside each menu). Reason I ask is because, usually when I write up my Menus for the week, I don’t specify what I’ll cook on any given day… I have the list, but can pick and choose depending on what I feel like having on any given day.
    So, for MPM, I put the dates beside each menu… but I might still mix it up. ;)

      I mix it up, too. I just fix whatever I feel like that day. My menu just lets me know what my options are based on the ingredients I have. Welcome to MPM!!
