Welcome to Menu Plan Monday! For those of you who are new, this is the day I post my family’s meals for the week. This list includes just dinner menus in no particular order. These are just the meals that I have the ingredients for. I just make whatever meal I feel like that day. I find that planning out meals each week makes grocery shopping easier and cheaper. Planning out meals saves me from standing in front of the refrigerator at 5 o’clock praying for a meal to magically appear.
Last week’s menu was a success. I love that Black Bean Chili! Cauliflower soup didn’t happen – not sure why. My daughter and I were looking forward to it. I am trying to slowly work my way into freezer cooking so that I have a few meals stockpiled for emergencies – no time to prepare a meal, sick friend, etc. So, when I made my cavatini last week, I just made double and froze half. My first freezer meal! So excited!
Here’s what we’ll eat this week. This week, I tried to plan quick, easy meals that everyone likes and one casserole to leave for the kids and my husband to bake while I am away one evening.

Chicken Broccoli Divan – right off the Campbells cream of chicken label
Grilled chicken, potato cups, grilled zucchini and squash
Hamburgers, cottage cheese, baked beans
Tacos
Pasta alfredo, grilled asparagus
