Menu Plan Monday – May 11, 2009

Can I just tell you that my idea last week for quick, easy, on-the-fly meals on the grill was awesome!  Our schedule was crazy last week and I knew that mealtime was going to be a challenge.  My plan was to just grill meat and veggies on the grill as the kids played in the backyard.  That way, the kids would get their fresh-air playtime before the evening activities started.  I could keep an eye on them and get some fresh air of my own.  We had great,simple  meals that everyone enjoyed.  There was little prep, little clean up and such easy grocery shopping!

This week, the pace of life gets slower…thankfully.  My meal plan will include pork enchiladas that friends requested Tuesday night.  I started making them last summer and we all loved them.  I’ll make some guacamole and mexican rice to go along with the enchiladas and we will have a great evening enjoying that meal with friends.

I’m not sure how to plan the rest of the week.  We joined a food share farm this summer and we get our first box of veggies this week.  I am so excited!  However, I’m not sure what is in the box yet.  I believe I’m supposed to get the email later today letting me know what veggies are coming.  So, I am going to plan a couple more meals, but they might change depending on the veggies.  I might have to start menu planning Monday evening or Tuesday.

Here is my tentative menu for this week:

Pork enchiladas, mexican rice, guacamole, chips

Hamburgers, grilled zucchini, squash and mushrooms, baked beans

Ribs, green beans,rice

Grilled portabella mushrooms, bruchetta, salad

Spanish rice, salad, green beans

Left overs

    I just found your blog. I LOVE IT! I like the idea of menu planning Mondays. I try to get my weekly menu done on Saturdays. We have two little ones running around the house, so I end up planning for breakfast, snack, lunch, snack, dinner, and snack. It’s a lot of planning but I found that it makes my life a whole lot easier to fix meals when I already know what we’re going to have.
