Menu Plan Monday – June 1, 2009

Summer has officially started in our house. Kids are out of school. The weather is great. My tomatoes and herbs and flowers are planted. The kids are going to my parents for 3 days. Life is good!
I am going to use these few days to actually plan out our summer. More on that in a later post! This weeks meals are going to be easy. I have things I want to do this week besides cooking. Tonight, I’ll pull some browned ground beef out of the freezer to make an easy Baked Mostaccoli and salad. We have a date night planned this week, so that means a night off cooking!! There are pork chops in the freezer that can go on the grill later in the week. My family loves quiche, so I’ll have to make one this week to use some great of the great veggies that we’ll get in our CSA share this week. More on that later, too! I like the way this week’s meals are shaping up. I don’t even think I’ll have to go to the store!
Here’s the official plan for the week:
Monday – Baked Mostaccoli and salad
Tuesday – date night!!
Wednesday – left over mostaccoli
Thursday – quiche, salad, fruit
Friday – grilled pork chops and veggies

Good for you!! We all need a date night every once in awhile! I have decided not to post my meals… I keep either messing up with not getting everything at the store or something comes up and that meal is scratched!! I am still doing it but not posting! Have a great few days without the kids. That is always nice!! I love my kids with all that I am but us Mom’s need to breathe too!!

Chele- my meal plan never goes exactly as planned! But, at least I have a plan and a general idea of what I have available to make for dinner. It is only Tuesday and I have screwed it up already. I went out to dinner with my husband last night and I we are going out with friends tonight! I’m so excited! We are making the most of a couple days without kids!
