Menu Plan Monday – June 8, 2009

Its another new week of trying to plan our weekly menu. I might have to change my planning date from Sunday night to Wednesday since we now get our summer share of veggies from our local Community Supported Agriculture (CSA) farm. We are on week #4 and the veggies have been amazing! We eat pretty healthy (most of the time), but this has taken it to another level. Take for instance the greens. I have never been a real salad girl. Lettuce does not excite me. Since we have been getting these amazing salad greens in our CSA boxes, I have been eating salads everyday. And by salads I mean a big bowl of leaf lettuce , french sorrel, spinach and arugula with some olive oil and red wine vinegar – and that’s usually the entire salad. It is so flavorful! Incredible! We have also been making a great oriental salad with bok choy. So, pretty much, as long as the greens keep coming, we’ll have salad on the menu!
The other top foods for last week were the mostaccoli and the quiche. I have to say, the quiche was amazing because of …you guessed it….greens! I fried a couple slices of bacon in a pan, then removed the bacon and wilted some turnip greens and some beet greens with the drippings. I added the bacon and the greens to my crustless quiche recipe. Fabulous! My 8 year old daughter even had 2 big pieces.
I don’t know what is going to be in my veggie box this week. Its always a great surprise. So, I’m just planning my main dishes and I’ll just fill in with whatever veggies I get!

Pasta alfredo w/ asparagus
Spanish Rice
Grilled Brats
Leftovers
My family has been craving some sweets, so I’m going to try my hand at chocolate chip banana bread and homemade blueberry muffins this week, too. Any good recipes you’d like to share?

I haven’t eaten yet today and you are making me hungry! haha Anyway, we too have been eating healthier lately. We’ve been given some veggie, fruit and fish blessings like squash, zucchini, green beans, irish potatoes, blueberries, cherries, mahi mahi and our garden is starting to produce. I’ve never had a garden before but THAT is exciting watching your food grow. We’ve been eating alot of stir fries and grilled fish, yummy. Last night I made a salsa called Fire and Ice Salsa, SO good. It had watermelon and pears, red peppers, jalopeno peppers, cilantro, green onions and lime juice, tasty!! It was the perfect name for it
OH and I made cherry and blueberry crisp with vanilla ice cream…ahhhh…now I’m REALLY hungry :0
