Cool Summer Treat

This week, for Get Your Creative On, I am totally stealing a friend’s idea for a cool summer treat. I have always struggled with coming up with new treats for the kids. A couple summers ago, my friend Nita shared this great tip for making “ice cream” sandwiches. My kids loved them! And they are so easy!
All you need is chocolate graham crackers and cool whip. That’s it. Spread the cool whip on one cracker and then top with another. I like to have the cool whip as thick as you would normally find on an ice cream sandwich. (You can use the low-sugar or even flavored cool whip.) Freeze your sandwiches in an airtight container. Enjoy them right out of the freezer!
Last week, my daughter made a container full of these. I took pictures to show you, but instead of having the food in focus, I just got some blurry stuff in front of a great shot of my daughter’s shirt. I really need a new camera or just someone to teach me how to use mine!

YUM! These will be fun for the kids to make on their own, and then even more fun to eat. ; ) Note to self: add cool whip to the grocery list.
Good idea! The girls have been making mini ice cream sandwiches with sugar cookies and ice cream – we wrap up and put them in the freeze. Our latest concoction has been bunny track ice cream (peanut butter, chocolate, reeces cup ice cream) sandwiched between peanut butter cookies. G said the cookies did not hold up well enough. We are trying recipes for C’s popsicle stand – still in the planning stage.
