Menu Plan Monday – July 20, 2009

Veggies, veggies, veggies!! We have been so blessed with fresh summer veggies this week. Our CSA keeps loading us down with a great vareity of veggies, some of which we’ve never tried before! And, when I went to pick the kids up from my parents this weekend, my dad filled the back of my car with potatoes, cucumbers, peppers, tomatoes, green beans and onions from his enormous garden!
This is the time of year when I was growing up that we rarely ate meat (even though our family had a cattle farm) just because of the abundance of fresh food from the garden. Now, my family demands requests I through a little meat on the table, too. I have some chicken breasts and ground beef in the freezer to throw on the grill and since I have tomatoes, you can bet I’ll fix bacon! Love those BLT’s!! I could eat them for every meal and I sometimes do when the tomatoes really start coming on.
So, my menu this week is basically the veggies I’ll be cooking (and in no particular order). I love this time of year!
Dad’s Potatoes
-cut up potatoes (leave skin on), carrots and onions
-toss with olive oil and season salt
-wrap in foil
-place on the upper rack of the grill while grilling meat
-cook 20-30 minutesRosies Bok Choy Salad- substituting head cabbage for the bok choy
Marinated Cucumbers and Onions
Mixed Green Salad with Assorted Veggies
Grilled Peppers and Onions
Kohlrabi and Beet Stems with Ranch Dip

Looks great! I made that cabbage/ramen salad last week (we have bok choy in our garden). Sooo good.
All your other plans look very familiar to us as well–I love this time of year with all the vegetables. Nothing better than a tomato sandwich!
My menu plans are something on the grill, and something from the CSA basket as well. Grilled squash, eggplant, and corn are frequent offerings. I made caprese salad with an heirloom tomato last week. Melon cubes are almost daily served up as a side. I love summer.
Sounds yummy =) We are definitely eating more veggies and fruit now that summer is here. I forgot how much I love fruit! And I’m learning new ways to prepare veggies which is always good.
