Menu Plan Monday – August 24, 2009

As you may know from the last few posts, we are getting back to routines and schedules around here. We’ve had the “unbusy” summer. Now, it’s time to get into the swing of school and activities and events. One of the most important routines for our family is meal planning. If the meals are lined up for the week, that is one thing I don’t have to worry about. There is none of the 5 o’clock peering into the fridge wondering what to fix for dinner. Meal planning also makes grocery shopping much easier, too. I just buy what’s on the list for the week. Much faster and much cheaper than wandering the aisles of the grocery store making up meals on the fly.
This week, I am going to try and plan lunches as well as dinner. This is our first week of homeschooling, so I want the lunches to be a no-brainer, also. I have found that although my dinners are usually healthy, made-from-scratch dishes, lunches are pretty much convenience food. It all evens out.
Here is the plan for this week:
Kids Lunches
- Bean burritos (my kids’ favorite)
- Ravioli
- Mini pizzas (from Schwans)
- Ramen noodles (the kids love them )
- Noodles and pesto
My Lunches
- Leftovers
- BLTs (the tomatoes are coming on and I just can’t get enough homegrown tomatoes and bacon!!!)
Dinners
- Chicken quesadillas, rice, guacamole and chips
- Chinese ribs, rice, Asian slaw
- Black bean lasagna
- Burgers on the grill, Dad’s potatoes, corn on the cob
- Mostacolli, salad, bread

I slacked this week with the menu but I plan getting back on track now that the kids start tomorrow! FYI, I am almost done in my reader….whew! LOL

[...] Last week’s menu was a hit, even though I didn’t exactly stick to it. We had family staying with us for a few days, so I modified it a little. For instance, instead of the Chinese Ribs, I made BBQ Ribs. They were fantastic! I didn’t make the burgers, so we are having them tonight. We love Mexican Lasagna.
