Hard to believe another Monday is here!  Hope you all had a great weekend.  We certainly did.  Now, it’s time to plan for another great week.  The first step in planning my week is always the menu.  When I know what I am going to feed the family, everything else just seems a little easier.

Last week’s menu was a hit, even though I didn’t exactly stick to it.  We had family staying with us for a few days, so I modified it a little.  For instance, instead of the Chinese Ribs, I made BBQ Ribs.  They were fantastic!  I didn’t make the burgers, so we  are having them tonight.  We love Mexican Lasagna.  I have had several requests for this recipe.  I just keep forgetting to type it out.  I’ll do that soon and post it!

The best part about last week’s menu was the lunch menu for the kids.  It was our first week of home school, so I wanted lunches to be easy.  The meals were easy and there was no arguing over what everyone wanted because it was printed on the menu.  Wonderful idea!

So, what are we going to have this week?  Here’s the plan……….

Kids Lunches

  • Bean burritos
  • grilled cheese and tomato soup
  • picnic lunch (fruit, crackers, hummus and pita bread)
  • spaghetti
  • lunch with Grandma

Dinner

  • hamburgers, Dad’s potatoes
  • chicken wings, fall casserole (w/ zucchini, squash and eggplant)
  • pasta with pesto sauce, grilled chicken, salad
  • tortilla soup
  • homemade pizza

    sounds great just one question what is dads potatos

    Angie- Dad’s potatoes is my Dad’s specialty. Cut up potatoes and onions (you can add carrots or green beans too if you have them). Toss with olive oil and seasoning salt. Wrap in foil and cook on the top rack of the grill while meat is cooking. Soooo yummy!!

    Sounds good. I like the lunch ideas, as my kids are not school age yet. :-)

    Shrimp Scampi, Hungarian Pork Chops with Potatoes, Box Pizza, Pasta with Marinara Sauce, Barbeque chicken – all with lots of fruit and veggies. We spent a week at my IL’s and we are green deprived!
