Menu Plan Monday – October 26, 2009

Last Monday, I didn’t post a Menu Plan Monday.  Sorry!!  I have heard about it all week!  The truth is I was wiped out last Sunday night – that’s when I usually write my MPM post.  I spent 5 hours that afternoon cooking!   Afterwards, I just crashed.   I love to cook, but I usually don’t spend that amount of time cooking.

Thanks to Mandi at Organizing Your Way, I spent my Sunday afternoon cooking 20 meals plus 2 dozen apple muffins!  I have been intrigued by batch cooking for some time.  I just didn’t know how to go about it on a large scale.  When I make chili or mostaccoli, I might make a double batch. But that’s about it.  There have been some great posts on Organizing Your Way about Once a Month Cooking.  One of the resources mentioned was  This site has once a month cooking ideas, menus and grocery lists.  With a little help and encouragement from Mandi and, I managed to fill my freezer in an afternoon!  Be sure I’ll share the details very soon!

We certainly enjoyed the fruits of my labor last week, as well as a night having dinner with friends and a date night!  And this week will be much the same.  We’ll have some meals from the freezer and some fresh meals.   Here is my menu plan for this week.

From the freezer:

Mexican Cornbread Casserole, chips and guacamole

Chicken Chili

Beef Stew, rolls

Chicken Chile Casserole, salad

Fresh meal:

Baked Pork Chops, spaghetti squash, green beans

    I owe you an email but in the meantime, I will comment here! What an awesome idea – and what an accomplishment. My girlfriend has been talking about doing something like this once a month idea. The food thing on busy afternoons (tutoring, piano, whathaveyou) is my Achilles heal. Thanks to Fly Lady, I’m maintaining a much cleaner domain – now onto managing the FOOD! Thanks again for pointing me in a good direction!!

    I used to do this all of the time when our lives were busy with daughter at home. I don’t do it so much anymore since it is just the two of us. However, I do prepare things for my daughter since she is now the busy one with a full-time practice and two little ones. It is such a great idea and time-saver. I would love for you to join me for Crock Pot Wednesdays at Dining With Debbie. Come post a favorite slow cooker recipe and grab a new idea as well. Thanks again,
