Menu Plan Monday – November 2, 2009

Can I tell you how much I love having meals in the freezer to just pull out and bake.  Add a side and viola!  Dinner!  Its been two weeks since my afternoon of cooking for the month.  Those meals have lowered my stress at dinnertime.  Even though, I have a weekly plan and know what I am going to fix throughout the week,  sometimes I just don’t have the time or energy to prepare those meals.

Last week, we really enjoyed the Mexican Cornbread Casserole and the Chicken Chile Casserole.  We also had two, yes two, date nights!!!  I just fixed the kids bean and cheese quesadillas (their favorite) and we were off to enjoy wonderful meals someone else cooked and served to my husband and I.  So, meals this week were really good and stress free.

How can I top last week?  It will be hard.  I still have good freezer meals to pull out and I have a couple fresh meals planned.

From the freezer:

Black beans and rice (made into burritos), chips and salsa

Chicken Marsala, rice, green beans

Chili, grilled cheese sandwiches

Mexican Cornbread Casserole

Fresh meals:

Chicken Picada

Homemade Pizza

  1. That chicken marsala looks great! It’s nice that you can just pull them out of the freezer. We’re looking at getting another freezer because right now we just don’t have the space to save meals like that. It’s nice to know that this system is working for you.
