Menu Plan Monday – November 9, 2009

Its another Monday morning.  My usual Monday morning routine is to get up and proof my Menu Plan and then post it.  Well, this weekend the temps were in the 70s!!  We are in central Illinois, so this is not normal weather for November.  We probably won’t see these temps until April.  Needless to say, I spent the entire weekend outside and didn’t give a care to preparing for this week.  So, my house is a wreck and I didn’t make a menu.

Thankfully, I still have meals in my freezer from my day of once-a-month cooking.  In my freezer, I spy….chicken chili, broccoli and cheddar chicken, and baked ziti.  We are going out one night this week and I have some pork chops I want to grill out before the winter weather comes.  That sounds like a plan!  I love having meals in the freezer for times just like this.  If I didn’t have them, I would be scrambling and stressing.  Not so much today!

This week our family will be dining on:

Chicken chili, cheese quesdillas

Broccoli and cheddar chicken, rice, salad

Baked ziti, salad

Grilled pork chops, sweet potatoes, green beans

Left-overs

    okay, can I just say I am jealous that you are simply reaching into your freezer for meals this week? I am going on a trip with my daughter and am wondering, what can I make ahead so my son and husband will not go hungry (or eat french-fries) every day we are gone. :) I should so do the once a month thing.
