Menu Plan Monday – February 1, 2010

Sorry for the lack of a menu plan last week. I had a menu planned out, it just didn’t get online. Last Monday was one of those Monday’s. I will tell you that I tried a new recipe last week – Crock-pot Chili-Lime Chicken. It was fabulous! I used it in my enchiladas verde instead of my normal cumin rubbed pork loin or chicken breasts. I found it a couple weeks ago on Sister Wisdom and she found it on Real Mom Kitchen.
This week, I am going to still try and get as many veggies in as I can while still satisfying the meat eaters in my family. Chili is on my menu for the third time in a month, but before you go thinking we really love chili, let me clarify. I haven’t actually fixed the chili on the menu. Something always came up on chili-making day (which is the day before we eat it – much better the second day). So, we will try chili again! I have some leftover steamed asparagus from this weekend that will make a great quiche. My friend gave me a super easy and really yummy french onion soup recipe that made enough for last Friday night, some leftovers in the fridge and a container in the freezer. I think I need to work that in somewhere this week.
Dinners
Chili, cornbread, veggies and dip
Crustless Asparagus Quiche (I use this recipe as a guide), salad, homemade wheat bread
Sesame ginger chicken drumsticks, rice and stirfry veggies
Roast beef sandwiches, french onion soup (I’ll share the recipe soon), broccoli salad
Spaghetti and meatballs, salad
Breakfasts
yogurt, fruit, protein smoothies
whole grain, organic cereal
pancakes
bagels and cream cheese
frozen waffles
fresh fruit

Mmm those enchiladas verde sound awesome. any chance you’ll share that recipe??
