Menu Plan Monday – February 8, 2010

After a great weekend in a hotel with my husband’s family and a 10 and under boys’ hockey team and then straight home to a Super Bowl party, I was still nearly in a food coma this morning. There is only so much pizza, burgers and cream cheese based snacks one can eat and still function. I didn’t plan a menu for this week before I left, and I sure didn’t feel like it this morning. I had a salad and lots of water for lunch so my head is starting to clear.
It’s looking like we are in for a winter storm over the next couple days, so I’m trying to think of meals that I have the ingredients for and that would be warm, yummy and kid friendly – oh yeah, and healthy, too. Here’s my plan.
Dinners
Pork BBQ sandwiches, broccoli and carrots and dip, baked beans
Spanish rice, green beans, homemade bread
Homemade Pizza, salad
Sesame ginger chicken drumsticks (leftover from last week’s menu), veggies of some sort, rice
Pancakes and sausage, strawberries and blueberries
Lunches
Bean and cheese burritos
Pasta and sauce
PB and J
Leftovers

Menu planning is a New Year’s resolution – I can’t say we are spending less but we are definitely eating better. Here are my recipes and links for the week:
