Menu Plan Monday – February 15, 2010

From the beginning of our marriage, I have taken feeding my family very seriously. My goal has always been to plan and prepare healthy, well-balanced meals. I was raised on home-cooked, and usually home-grown, food. I wanted that for my family as well. We stay away from processed foods as much as possible and try to eat a variety of fresh foods on a daily basis. As a result, we can tell when we don’t eat right.
I thought I was being nice to my family last night by ordering a pizza. It all sounded great at the time, but by the end of the night we all felt sluggish and just yucky. Back to fresh foods today! I am out of just about everything (thus the pizza last night), so we’ll make a trip to the store to stock up on fruits and veggies and other fresh ingredients.
This week, I’m going to try a couple new recipes. I found a slow-cooker pork carnita recipe I can’t wait to try. I think it will make great burritos. In my never-ending quest for healthy snacks my kids will eat, I am going to try this granola bar recipe. I’ll let you know how it goes. Here’s what the rest of the week looks like.
Breakfast
Fruit smoothies
Whole grain cereal and fruit
Pancakes (I made a big batch this weekend and froze them)
Homemade bread, peanut butter and honey
Lunch
Bean burritos
Salads
Left-overs
Ham and cheese wraps
Dinner
Pork burritos, guacamole, chips

Something with ground beef – I’ve got a lot in the freezer

We have a lot of ground beef too and I am always trying to think of good recipes. Here are a few, homemade sloppy joes, easy and yummy, tonight we are having lasagna; of course my kids favs are spaghetti and black bean and ground beef tacos; hmmm..let me think a while I know I have a lot more.
I’ve got a recipe for ground beef, called Souper Burgers (you use a can of chicken gumbo soup in it hence the name, but my 4 year old likes the name for ‘super hero’ connotations!)
1 lb ground beef
1 can chicken gumbo
1/4 to 1/3 cup of onion chopped
1Tbsp. prepared mustard
1/8 tsp pepper
6 hamburger buns
(optional) add in some finlely diced zuccini and/or red bell pepper to pack in some more flavor and veggies
cook beef and onion untill beef is browned and onion is tender, (add optional veggies if you like) spoon off fat, add soup, mustard and pepper. Heat through stirring often.
I just went through a whole exercise of redefining my success. I’d last done this properly about 6 – 7 years ago and with the addition of the twins I felt like I needed to revisit it and …………
