Menu Plan Monday – Cooking double for the freezer

This week’s menu is going to be a bit different.  A friend of the family had a knee replacement 4 weeks ago.  The meals from friends have run out and her husband’s cooking is…well…you know.  So, I am going to put some meals together this week that can be doubled and frozen. Then, Wednesday or Thursday I can deliver them.  Doubling meals I’m already making won’t take much more time than preparing my regular meals.

Here are the meals I am planning on preparing this week:

Mostaccoli

Chicken Rice Casserole (recipe below)

Meatloaf and mashed potatoes

Grilled chicken

I’m also planning on making and freezing pancakes an apple cinnamon muffins.

When I deliver this food, I’ll also take a couple pints of canned green beans from the garden last year.  I only have couple left and it will be time to can more before long!  I’ll also take over a broccoli salad and a loaf of homemade bread.

Here is my recipe for Chicken Rice Casserole:

1 cup uncooked rice

1 (10.75 ounce) can condensed cream of mushroom soup

1 (1 ounce) package dry onion soup mix

1 1/2 soup cans of milk

4 or 5 boneless chicken breasts

Preheat oven to 375.  Mix all ingredients except chicken in a 9X13 pan.  Place chicken on top. Season with seasoning salt.  Cover and bake for 1 – 1 1/2 hours.  I just watch it after an hour.  I’m not really an exact cook!

    this is a great idea! My husband’s Uncle replaced our front door for us. Labor free-of-charge. It took him six hours since our door frame on this 30-y-o home wasn’t square or plum…twisted. Needless we felt we needed to do something for him, and his wife and three children who spent a Saturday without him while he was at our house fiddling with our door. So, I made them a week’s worth of freezer meals (thanks to your tip why back when). I wrote easy instructions on the outside of the freezer Ziploc bags, and included the necessities. They loved the gesture, and really loved not having to cook or do takeout for a week.
