Fast, Easy Clean Up Meals – Menu Plan Monday

Last Monday, I shared my easy pesto and focaccia bread recipes, but no weekly meal plan. I thought that I had enough food in the fridge and pantry that I didn’t need a plan. Silly girl. Our meals were pretty poor and my mood was a bit frazzled last week, so the menu plan is in effect this week!
This week, we are starting our fall schedule with skating and piano lessons and we have bible school each night at 6:30. The weather is supposed to be really hot and humid, so I don’t want to be standing over a hot grill or heating up the house with a lot of cooking. This is definitely a week that needs a plan! I need refreshing, fast, easy clean up meals that will make everyone happy. Don’t laugh. I’m serious. It will be a challenge, but I am up for it!
Taking all my criteria for meals this week into consideration. Here is the plan I came up with.
Cold cut sandwiches, pasta salad and watermelon
Bean burritos, chips, salsa, guacamole
Taco salad
Spaghetti and meatballs
Grilled chicken wraps, hummus, veggies
leftovers

I am envious! somehow I managed to get myself into a gluten-free baking tizzy this week with my menu planning. We are hosting a first bible study group on Thursday and I am planning to make chocolate chip cookies which need to chill for 36 hours before baking. And, I am trying to make a few more of the snacks we consume here at home.
We are feeling you though with the humidity! It is supposed to feel like 105 here tomorrow! We aren’t going outside.
