Build Your Own Taco Salad

Thanks for all the encouragement and suggestions after last week’s menu plan monday post about my son’s (hopefully temporary) restricted diet. I did get some comments and emails questioning my choice of foods. Rest assured, I sought out organic produce and meats. And, if there were food on my menu that contained ingredients that weren’t on his diet, we didn’t let him eat it.

It was a long week with no pizza or cookies or, well, anything my son likes to eat. It has been challenging to say the least, but he made it through. It was a good lesson for my son in what is really in the food we eat. He can now tell you what probably has high fructose corn syrup, wheat or soy! We go to the doctor today to see if we can start lifting some of the restrictions. Please pray we can! Two weeks with no eggs, dairy, grains, corn or soy is very difficult for a 6 year old boy!! My son thinks he is starving!

Taco Salad

The week wasn’t a total bust. Instead of having the bean burritos on the menu last week, we made taco salads. We hadn’t had them in a while, so they were a treat and a huge hit! I set up the ingredients in the middle of the table and let everyone build their own.

My husband, daughter and I pretty much put it all in our bowls. My son ate the refried beans, meat, salsa and guacamole all mixed together and loved it – 3 bowls worth! Maybe he was starving!

I love meals like this in the summer, especially when friends come over. That way everyone gets what they want. Do you have a “build your own” family favorite meal you’d like to share?

I’m not sure what the doctor will say this afternoon, but I’m going to make a cautious meal plan anyway. I can modify it to fit any special diet needs later. It’s suppose to be super hot this week, so I don’t want to cook too much.

  • chicken salad sandwiches, carrot sticks, strawberries
  • turkey sandwiches and pasta salad
  • grilled brats and creole tomato salad
  • baked potato bar (cheese, bacon, salsa, taco meat, sour cream, ranch dressing) broccoli salad
  • homemade pesto sauce and pasta, tomato-basil-mozzarella salad
  • roast beef wraps (recipe coming soon)

  1. I’m sorry to hear about your son and the restricted diet. We have food allergies in our family, so I understand the feeling of not feeling like you can eat anything. Praying that the restricted diet gets less and less restrictive for your son.

    We love “build your own” dinners too; our favorite summer dinner is build your own grilled pizzas.
