Freeze Dried Goodness and Menu Plan Monday

A few weeks back, I shared some of my son’s new, short-term dietary restrictions on Meal Plan Monday. I received lots of great advice and recipes to try from wonderful readers. Thank you!! They all helped immensely. Trying to keep a 6 year old boy eating nothing but veggies, fruit and meat was a hard. It was a rough couple of weeks, but we made it.
We got to try new recipes and variations of old favorites. One new food that helped was sent to us by an Overcoming Busy sponsor Misty at Your Own Food Store. Her online shop provides freeze dried, shelf stable foods. You can read her introduction post HERE. Misty was kind enough to offer some of her fruits and veggies to see if they would help my son (and the rest of us) get through this.
She sent us strawberry, pineapple, mango, banana, spinach, broccoli, peas and blueberries. They were very helpful. It was like a new adventure figuring out how to introduce them to my son. And, since his restrictions have been loosened a bit, we have tried them in more ways. We have added them to everything from smoothies to sauces to quiches to muffins. Here is one of our faves.
Spinach Omelet
Just add a scoop of spinach to the beaten eggs and let the spinach rehydrate for a couple minutes. Add some chopped onion and and pour into the pan to cook.
Such a tasty omelet. I love spinach omelets, but I don’t like to waste the unused spinach. This freeze dried spinach is good for a year after opening!
Menu Plan
Since this all started with my menu plan post and this is Monday, here is my menu plan for the week.
- Baked chicken, mashed potatoes and gravy, green beans
- BLT’s
- Grilled chicken (found this great marinade recipe from AllRecipes.com), coleslaw, grilled veggies
- Spaghetti and homemade sauce, salad
- Chili (not exactly summer food, but my son has been asking for it)
