Making Meatballs For The Freezer

Now that the fall schedule and fall weather is upon us, I am thinking of ways to make our lives easier. One thing I have been doing is freezer cooking. I haven’t had time to do a huge one day or even a half day of freezer cooking, but I have had time to do a little here and there.
A super quick and easy freezer recipe to make is meatballs. When you are making meatballs for dinner, it only takes a few extra minutes to make enough to freeze for upcoming meals. I start by using up bread heels I have saved in the freezer or those last couple hamburger buns that won’t make it til the next time we have hamburgers.

I make the saved bread into bread crumbs in the food processor. It saves money over buying bread crumbs and cuts down on food waste.
Next, I add the bread crumbs to the rest of the ingredients in a large bowl. I usually don’t measure my ingredients, so I’ll do my best estimating for you. Feel free to change it up a bit to fit your family’s taste.
Meatballs
- 2 pounds ground beef
- 1/2 cup onion, diced
- 3/4 cup bread crumbs
- 2 eggs
- 1/3 cup parmesean cheese
- 1 tsp garlic salt
- 1 tbsp Italian seasoning
Mix the ingredients together with your hands until well mixed. Make 1-1/2 inch meatballs and place on a cookie sheet covered in wax paper. When finished, place the cookie sheet in the freezer until the meatballs are frozen. Put the frozen meatballs in freezer bags.
You’re done! Now, you can grab the right amount of meatballs you need for dinner, pop them inĀ a 400 degree oven for 25-30 minutes and serve!

Thanks for the great idea! I love using my freezer too. I like to divide casseroles in half and freeze one for later, it makes dinner so easy!
