What’s For Dinner This Week?

The weather around these parts has been over 100 degrees for weeks. We usually grill out several times a week, but it’s even been too hot for that. I am so thankful that the forecast for this coming week is much more bearable. That means break out the grill!!

A couple of weeks ago, I got a great deal on chicken thighs. They’ve been in the freezer just waiting for the weather to break. I’m wanting to try a new Honey Spice Chicken recipe. We love grilling thighs because they don’t get dried out as easily as chicken breasts do.


My daughter loves pork chops. She goes to the local meat shop with me to make sure I get them while I’m there. This week, I wanted to try something new, so I found this Dijon Pork Chop recipe. It looks so yummy and I have all the ingredients.

As far as the rest of the week, I’m thinking of grilling italian sausages and veggies, sloppy joes made with ground turkey, chili mac and salad, and left overs.

    My CSA basket is overflowing with peppers and tomatoes. So, this week, I will cook to my husband’s ethnic roots: Hungarian Lesco’ (stewed peppers and tomatoes), and his family’s version of Panzanella (tomato salad stuffed inside of a 1/4 loaf of Italian bread). The weather here has been unbearable – so heavy use of the grill is in order.

    Visiting from Meal Plan Monday! I have a bunch of chicken thighs in the freezer as well and that recipe looks really good. It’s been miserable hot here as well. Last week I had my husband pre-grill a bunch of our stuff after the sun went down (it was about 5 degrees cooler out that way…maybe) and it worked well for us.

      We did that a few weeks back, too. I put the meat in the freezer and have been pulling it out to make chicken salad and quesdillas. Thanks for visiting!

    It looks like it’s going to be in the low 100’s but humid in Las Vegas today.
    Your menu plan looks delicious! The pork chop recipe at Allrecipes looks good. I’ll have to bookmark that one.
