Muffin Pan Omelettes

I’ve been seeing the muffin pan omelette craze all over Pinterest, Since breakfast is our most challenging meal of the day, I thought I’d give them a try. My only complaint is that I didn’t try them sooner!! They are so easy to make and they are so yummy!
Muffin Pan Omelettes Recipe
12 eggs
1/3 cup water
whatever you want inside the omlettes (ham, cheese, veggies, etc.)
Whip eggs and water in a large bowl. Stir in goodies. Pour into well greased muffin tins leaving 1/2 inch at the top of each muffin cup. (I used Bakers Joy spray with flour and a silicone muffin tin and they slid right out when done.) Bake for 15-20 minutes at 350 F.
These were great for breakfast. I saved some of the leftovers in the fridge for the next day and popped a couple in the freezer for later. Both came out great when I needed them. Breakfast solved!
